Odanak Cheese Factory

Who we are ?

Fromagerie Odanak cheese factory is the only North American native owned and operated business of it's kind. Established and manufacturing cheese products since 1942 in the Abenaki territory of Odanak Quebec. The Odanak cheese factory and dairy products facility is an economic development enterprise, owned and operated by the first nations father and sons team of Rick and Richard O'Bomsawin. The factory provides training and employment opportunities for upwards to fifteen persons from the Odanak comunity.

The Odanak cheese factory has a daily refrigerated transport team which covers the province of Quebec. Our clients are principly distributors which cover the restaurants and supermarket chains. Odanak cheese factory is always interested in acquiring new corporate clients as part of our mission and goal into the future.The fromagerie is constantly looking for ways to not only expand our product mix, but ways to better serve our customers.

 

What we do

The Fromagerie Odanak Cheese factory manufactures and specializes in hand crafted Canadian style cheese products. Our cheese makers pride themselves on the quality and taste of our products.Currently, our product line offers 33 types of cheeses and here are the most popular in a descriptive format.

  • Fresh Cheese ( Grain ) : Curds are a local favorite with walk-in clientele as well most restaurants and supermarket outlets throughout Quebec. Our curds are packaged in multiple wheight sealed bags and is excelent when eaten right out of the bag, or when used in various meal preperations.

 

  • Cheddar : We produce a naturally aged cheddar cheese. Our cheddar is creamy in texture, flavourable and is made available in fifteen (15) different levels ( mild - medium - strong - x-strong - xx-strong - curds - poutine - unripened - smoked - orange - pointe cotton mild / medium / strong - marble yellow - marble white ). Cheddar is simply a matter of taste and preference. Our mild is extremely popular, while the discriminating customers enjoy the stronger style cheddars. The marble style cheddar is increasing in demand and is an excelent addition with salads. Our cheddar is vacuum packaged in block, wedges and slab forms. For retail accounts, the most preferred package size is the one (1) kilo brick. Restaurants will typically purchase two (2) kilo on up to four (4) kilo blocks or rounds.
  • Pointe Cotton : A specific style of cheddar custom made the original way. This cheddar is available in mild, medium and strong processes. Aged and sold in its cotton cheese cloth wrap format. Point Cotton cheddar is an extremely flavourable and is slightly drier in texture than our regular cheddars. A popular request by the tourists to our region. Produced in a four (4) kilo wheel form for delicatessens and specialty food stores and grocers. Pointe Cotton is also packaged in one (1) kilo wedges for the retail industry.

 

  • Fess ( unripened ) : Fess cheddar cheese is an unsalted slab cheese. Fess is a style of cheddar that is typically consumed within several days of its making. People wil use Fess in meal preperation or add salt to it and eat it with bread, crackers or plain. Fess comes in one (1) kilo bags and is sold to retail accounts through request. The store at Fromagerie Odanak will sell aproximately fifty (50) per weekend. Truly, Fess is a style of cheese that individuals search out rather than a spontaneous sale.
  • Feta : This style of cheese is mostly used in salads. Many Greek and Italian food dishes call for feta cheese as an ingredient. Feta is packaged in blocks and jars formats. When packaged in a jar, Feta is immersed in brine water which adds a saltier flavour and texture to it. Feta cheese produced at the Odanak cheese factory also comes with three spiced editions ( dill - basilic - garlic ) as a specialty cheese.

 

  • Spiced Specialty cheeses : Odanak cheese factory produces spiced cheeses in the cheddar style. Spiced cheeses are increasing in popularity and demand while offering the consumers an alternate choice. Spiced cheese is available in a variety of types which include ( garlic - bacon+garlic - parsley - roasted garlic - italian - bacon - all dressed ). Various mixes of spices sell well, such as the bacon+garlic. In addition to their appeal as a table cheese, we are cofident that spiced cheeses will find a place in the kitchens as well. Spiced cheese is available in block form and is typically packaged in one (1) kilo form.
  • Mozzarella : An Italian style of cheese most widely known as Pizza cheese. Mozzarella is used primarily as a "kitchen" cheese, that is used in food preperation and is available in either block or shredded form. Packaging is available from four hundred (400) gram to two (2) kilo vacuum sealed bags or one (1) to four (4) kilo blocks as a restaurant favorite.

 

  • Cheese in Brine : Basically, a cheddar style cheese in a high salt brine. Available in only jar form, this style of cheese attracts consumers which prefer salty flavoured cheese.

Cheese is like any other food item, one type does not fit all. By offering a wide variety of products we can satisfy most purchasers wants and needs. All our products are guaranteed for quality and freshness. Odanak cheese factory is Federally and Provincially approved and is a recognized member of Canada's dairy board.
